Welcome to quarantine baking. I think my other half is getting a bit overwhelmed by all the healthy treats… can’t stop won’t stop! You can make this recipe using any natural nut butter but I was definitely in the mood for some almond butter for this! Creamy texture with a little chocolate crunch. Also been loving these no bake recipes lately. Just pop this in the fridge for 2 hours and you’re good to go!
Vegan Almond Butter Bars
Bottom layer:
1.5 cups all natural almond butter (or any nut butter of choice)
1/3 cup coconut oil, melted
1/4 sugar free maple syrup
1/4 cup coconut flour
Chocolate Layer
1 bittersweet chocolate bar (4 oz) usually found in the baking section, finely chopped
2 tbsp all natural almond butter
Instructions
1. Get your 8×8 pan ready by lightly greasing the interior
2. Mix all base layers in a bowl. Place your pan in the fridge while preparing chocolate layer.
3. Mix your finely chopped chocolate and 2 tbsp of all natural almond butter and microwave at small 20 second increments until all melted. Give it a good stir in-between to ensure even melting. Once that’s done, spread it over the almond butter base layer and pop it in the fridge for 2 hours!
